My health is good (which always baffles doctors -- they expect fat people to have hypertension, high cholesterol, and the works, and I never do), but I feel it could be a lot better. I especially worry about my thyroid (my levels are normal, but my thyroid is a bit enlarged) and some apparent arthritis I have. I know that both of these things could be helped by a low-fat vegan diet, but dieting is also dangerous for me in a lot of ways -- I have a past history with eating disorders, and how I beat them is to stop dieting. So I'm talking abundance here. I focus on abundance when I want to eat more healthy vegan stuff and less crap. You all could encourage me by sharing your vegan abundance -- what do you eat that's way-healthy and still way yummy? Lists would be good, recipes even better, but especially I want to hear happy stories about health and abundance if you have 'em. Anyone wanna lend me this hand? I defeat those with lots of broccoli and spinach (raw salad and cooked). I love a spinach salad with fresh raspberries and chopped walnuts tossed in and lightly sprinkled raspberry vinegrette mixed in. I supplement mainly with B12, algae pills, Bragg's for my omega's, flax seed and then snack on tons of raw veggies and fruit. I can honestly say I have not been sick or abnormally tired like I use to be since becoming a vegan. As I gather more time, I promise to share more and some yummy recipes. Some of my fav foods are stir-fry and grilling veggies on the grill. Oh and garlic bread. Actually garlic anything! Pasta tossed with a bit of olive oil, fresh pressed garlic and a dab of melted soy butter is one of my easiest and tastiest staples. It makes the immune system so super strong, it could challenge any condition someone might have. my favorite food to eat in abundance would be mango. when it was in season, I could eat five, six... in one day. my husbands is watermelon, he can eat them forever. as for cooked foods, I think that I could have Indian everyday. There are alot of health options, if you go to the rihgt restaurants.(and to stay away from fried apetizers) although I love samosas. and they are usally pretty understanding about leaving out dairy and such.
