Guest guest Posted October 13, 2005 Report Share Posted October 13, 2005 3 Tablespoons Olive Oil 4 Large Tomatoes, coarsely chopped 1 Large Green Pepper, coarsely chopped 1 Large Onion, chopped 3 Cloves Garlic, minced 2 Each Bay Leaf 1 Teaspoon Oregano, crushed 1 Each Salt and Pepper, to taste 2 Cups Vegetable Stock 1 Cup White Wine 3 Large Baking Potatoes, 1-inch thick 3 Large Sweet Potatoes, 1-inch thick 2 Ears Corn, 1-inch thick 2 Each Yellow Squash, 1/2" cubes 2 Large Peaches, 1/2" cubes 2 Large Pears, 1/2" cubes 1. Heat the oil on medium heat.2. Cook tomatoes, pepper, onion and garlic until soft.3. Add seasonings, stock and wine.4. Bring to a boil and then add the chopped potatoes and sweet potatoes.5. Cover and simmer 15 minutes.6. Stir in corn and squash.7. Guest guest Posted October 18, 2005 Report Share Posted October 18, 2005 I made it again last night, but left out the last 2 fruits. It was really good! My son whined and complained, you know cuz it had that icky makes you sick squash in it! I ate 3 bowls and my daughter ate what signifies as a lot for her. I ended up using orange peppers (Costco sells a 6 pk that includes 2 each of red, orange and yellow peppers) instead and commented that it looked like fall stew cuz it was mostly yellow and orange! I had a spring green salad and the rest of the crew had spinach cheese ravioli with or without various sauces.Anouk Sickler <zurumato wrote: That sounds really good.
