You will know a buckwheat noodle, they are a darker

color, completely different taste and look like this

cooked up in a dish

I find them at the Japanese market but I know many of

you don't have these types of grocery stores near you.

You can also find plenty of ingredients here at Asian

grocer online

Buchwheat is not a form of or a dirivative of wheat. It is an entirely

different grain.

I use it a lot, cooked so it is not mushy, it make a nice meat substitute in

taco and pretty much what you would use ground beef for.

Buckwheat has a very strong taste. Would it not sort

of overwhelm the other ingredients? My mother made

buckwheat waffles when I was a kid; and I really

disliked them. But maybe that was just a kid thing.

I would be willing to give them another try. amy
