Mashed Sweet Potatoes with Roasted Red Onions

 

6 cloves garlic, peeled

1 red onion, quartered, then sliced into 1-inch slices

1/4 cup olive oil

salt and black pepper

2 1/2 to 3 cups sweet potatoes, cooked and mashed

1 tablespoon butter

 

Preheat oven to 300 degrees. Place the garlic and onion on an 11X8-inch sheet

of foil, drizzle with the oil and sprinkle with salt and pepper. Fold foil edges

over vegetables to make a closed packet. Place packet in a glass baking dish.

Bake about 1 hour or until onions are soft and translucent.

In a medium bowl, combine the mashed potatoes and butter with the roasted

garlic, onion and any juices. Serve immediately.

Makes 6 servings.
