Guest guest Posted August 27, 2007 Report Share Posted August 27, 2007 Onions in Raisin Sauce 1 1/2 teaspoons olive oil 3/4 pound pearl onions, peeled 2 cloves garlic, minced 1/3 cup dry white wine 1 cup beef broth 2 tablespoons tomato paste 2 tablespoons raisins 1/2 teaspoon grated orange zest 1/4 teaspoon dried thyme, crushed 1/8 teaspoon ground black pepper 1 tablespoon minced fresh parsley Heat oil in a medium saucepan over medium heat. Saute onions until golden, about 7 minutes. Stir in garlic, wine, broth, tomato paste, raisins, orange zest, thyme, black pepper and parsley. Simmer, uncovered, for 20 minutes, stirring often. When onions are tender increase the heat to high and cook, stirring constantly, until sauce thickens, about 3 minutes. Makes 4 servings. Guest guest Posted August 29, 2007 Report Share Posted August 29, 2007 Neither beef broth (in the originally posted recipe) nor chicken broth are vegetarian, this is why i suggested miso as a substitution. In my experience, the darker miso can substitute quite well for beef broth, I have done it when making french onion soup. They are fermented products, japanese in origin, they contain soy, barley, rice in different combinations (you need to read the ingredients if you can find a package in English). You can get it in very pale colors (tan, yellow, almost white, in red, and dark brown, (and all colors in between) They contain friendly enzymes and all sorts of micronutrients that are supposed to be good for you. Considering how good a cup of miso soup feels going down I believe it. One of my favorite sushi spots around here makes their own (yes, they ferment their own miso) and serve it with julienned cucumbers, it is quite a treat. , akfral wrote: > > what is miso exactly?
