Guest guest Posted August 29, 2007 Report Share Posted August 29, 2007 Granny Mae's Fancy Cucumber Sandwich recipe reminded me of my favorite summer sandwich so thought I would pass it along. I use whole wheat bread Sliced radishes cream cheese chives Parsley leaves/ baby spinach leaf, etc.+ black or Green olives(patted dry of juice) for garnish (note:If you place the greens on the top of the sandwich bread first the olive will not 'soil' the bread.) Mix the cream cheese and chopped chives and thinly spread on bread slices. Slice radishes and arrange them on the 'cheesed' bread slices. Top with second piece of bread. Cut in half. You can also remove crust and cut in quarters for a fancier tea sandwich. Top each sandwich with first a few parsley/green leaves, then an olive with a toothpick through it to anchor it to the sandwich. Serve immediately Note: I don't like to ask the hostess or guess what is in the sandwich so If you are serving sandwiches at a party, make a tiny place card to identify each type of sandwich. Write the name of the sandwich and place a piece of cucumber or radish next to the card. You can also cut out a photo from a seed catalog and use it to identify your sandwich. I eat them all of the time, They are great for me because my job is 100% computer work, and they are great to have instead of a fat filled or sugar filled snack. My mom gets terrible gas from radishes but G'pa & I can sit and eat a whole plateful (with a teensy bit of salt sprinkled on) without any bad breath or gas.
