Baked samosas wiht mint tamarind sauce vegan appetizers

Samosas

Ingredients:

I package of filo dough

A little olive oil

 

Potato filling:

4 large potatoes, cooked (steamed)

vegetable oil

1 medium onion, minced

1 cup peas (fresh or frozen and defrosted)

Spices:

Ginger (about 1 grated tbsp)

1 hot green chili (minced),

Ground coriander seeds (1 tbsp)

garam masala (1 tsp),

roasted cumin seeds (1 tsp),

lemon juice (1 tbsp),

cilantro, chopped (1 tbsp)

mustard seeds (1 tbsp)

 

Sautee onions in olive or vegetable oil, add potatoes and cooked

until browned, add the rest of the spices and peas. Sautee until

all mixed and fragrant (10 minutes or so). Allow this mixture to

cool down.

 

Take filo dough sheets (2 of them) and spread a little oil on them,

then fold them in such a way that you can make filled triangles with

the dough. I do it folding them back and forth. This is hard to

explain without a diagram, so experiment! Put filler in a

triangular section and fold until you have a little filled

envelope. Bake until golden and serve with

 

Serve with mint tamarind sauce

 

MINT TAMARIND SAUCE

 

Blend the following:

1/2 cup of tamarind sauce or paste (I get mine at Ranch 99 but any

indian or south pacific store would have it too) if it is a thick

paste you will have to add a bit of water to blend.

 

1 tablespoon fried whole cumin seeds (I use a tiny cast iron skillet

and veggie oil, just fry until golden - do not burn)

 

1/2 a bunch of cilantro leaves

 

same amount (or more) of mint leaves (a large handful or more)

 

2 tablespoons brown sugar

 

2 Serrano peppers, chopped but with seeds (that was what I used in

the sauce I brought, if you want it less hot, take seeds out, use

jalapenos instead of serranos or reduce the amount - if you do

reduce the amount you might want to use 1 tbs brown sugar intead of

2)

 

salt to taste

 

Taste it. Add any of ingredients to adjust to your own taste
