Coming from a very omnivorous family, becoming vegetarian is a challenge, especially since I spend much of my time with my eighty-six year old grandmother, who is completely against the idea. Fortunately, both she and my uncle who lives with her are quite willing to try new things, particularly if they don't have any ingredients that are " too far out there " , so to speak. We've recently discovered that none of us can stand the texture of couscous. Does anyone have suggestions for something else to use in recipes that call for it? I'm also looking for a good source of vegetarian recipes that don't make very much, as I don't want to cook a huge batch of something, only to discover I think it isn't very good, or if it's even just plain disgusting. Does anyone have a good suggestion for a replacement for ground beef? I have a recipe for barley soup that calls for ground beef, and am not sure what I could use to replace the beef. This doesn't work with roast beef, of course, but it works in Spaghetti sauce, Stir-fry, vegetable soup and almost any combination dish. If you just have to have something in there, try TVP, testured vegetable protien. To replace couscous in a dish, I would try barley. The French green one or the common brown/green ones take about as long to cook as barley so they could be added at the same time. We love this stuff and all the Worthington/Loma Linda canned and frozen Meat Substitutes. They substitute beautifully in recipes. They are already basically cooked, so it takes very little time to prepare them. I order it from Amazon.com They have great prices, no sales tax and free shipping. My recipe is in the recipe files here, but I will resend it if you can't find it. My recipe makes about 12 burgers at least. Let me know. We also use it for pizza, taco's, sloppy jo's, spagetti, chili, etc......... We just brown it a bit in a little oil. It comes canned, so it can sit on your shelf until you use it. I buy it by the case. Here are a lot of other Worthington/Loma Linda products. http://www.kelloggs.com/brand/worthington/ Adventist book stores(worldwide), Healthfood stores, Amazon.com and many other places on the internet carry these products. We love the luncheon " vegetarian meat " slices for sandwiches. BTW on it is sometimes hard to find the Worthington products on Amazon, so I just do a google search " _______ on Amazon " and it will give me the direct link. I make an Italian " Meatball " sub using the Tender Rounds. They come canned. I drain and rinse them, simmer them in spagetti sauce and spoon over Whole wheat sub rolls and sprinkle with Mozerella cheese. Just delicious! VegaLinks are great Vegetarian Hot dogs. I have a good recipe for BBQ them. I need to send it in. We use these Vegalinks to make Beanie Weenie's with Bush Vegetarian Baked Beans. They are great to roast over a campfire. I heat them, broth and all, in a pot for hot dogs at home. I even make a stir fry using them, some onions and green peppers. I add some garlic chili paste to it and some Lawry's seasoned salt. I mash the vegelinks and mix with Veganaise to make a delicious sandwich spread. Look in our Meat Substitute Files in the recipe files. There are many sub folders in there.
