Good vegetables to use in stir fries

I enjoy Chinese food, and am searching for vegetables that hold up

well in stir fries. Although I know they work well, I can't stand

bell peppers, so they're out of the question.

Sarah,

 

I have found some really good stir-fry mixes in the frozen section. I don't

think many of them have bell peppers in them, but I have to watch out for

squash. Of course my cat likes it so if some gets cooked by mistake, she

gets it. But Birds-Eye has some good ones, even in 5 pound bags. The big

bags come with a couple of sauce packets in them, but we never use them,

they just go in the trash.

Besides green pepper, I like to use Snow Peas, baby corn(find those in cans

near the soy sauce), Onions, brocolli, carrots, celery, cauliflower, squash,

cabbage, etc...... _____
