Judy and canning group

I always felt the same way about canning hahaha. It always scared me. I am a

mod. For the canning group isn't that funny? Me of all people.

Oh Donna,

My mom has canned several times with me and then it is sooooooo long before

need to can again that I forget the procedure. I'll have to write down the way

she does it, so I can do it when she isn't here. LOL

 

Your co-workers are funny. Despite their jabbing, it was comical and gave me a

good chuckle.

 

Go for it and make something. Then bring something you canned to a potluck in a

pretty dish, and tell them afterwards that they just enjoyed some of your

canning. Chuckling here..........

Canning sympathy

 

I found a great book at the thrift shop on canning. I told a few coworkers I

wanted to try canning. They sure make jokes about that: are you nuts you live in

So. Cal, someone take her away she snapped, what would you want to do that for

and last but not least.......oh no you will kill yourself with botulism. Hahaha.

I think I will go and try canning one day soon and only tell the group here

about it.

welllllll I don't know about that....I don't even know the difference

between low acid and high acid veggies....but if it will sit still I''ll can it.

well yes, I would hope so this is a vegetarian group after all!

 

It seems that tomatoes are the only vegetables with high enough acid

content on its own to be cannable (is this a word?) without any

added pressure, that is at 220F just boiling point of water. Other

vegetables will be acidic enough if pickled, but if not pickled,

then use a pressure cooker. I think you are supposed to be able to

read the gauge on the pressure cooker to make sure you maintain 240F

for so many minutes. Mine does not have a gauge, but so far, I have

only done tomatoes and pickled things (and jam). Wow, I am getting

experience or what? not bad for just 6 months on the property.
