It seems that tomatoes are the only vegetables with high enough acid content on its own to be cannable (is this a word?) without any added pressure, that is at 220F just boiling point of water. Other vegetables will be acidic enough if pickled, but if not pickled, then use a pressure cooker. I think you are supposed to be able to read the gauge on the pressure cooker to make sure you maintain 240F for so many minutes. Mine does not have a gauge, but so far, I have only done tomatoes and pickled things (and jam).
