Catherine recipes from the 70's

Hi:

I just joined this group and want to introduce myself.

I've been a vegetarian since 1974 and am looking

forward to exchanging recipes and ideas with all on

this group.

Many of the recipes I love and use are " old-school "

from the 70s and 80s when there weren't so many

" convenience " foods for vegetarians.

If anyone is interested, I'd be happy to share some of

my favorites.

I'm also curious about who " iowa-classic " is that

posted the cheesy pasta recipe. Where in Iowa are

you?

I'm in Mt. Vernon, Iowa.

Okay, here's a start. It's one of my favorite suppers

in the world.

I got the recipe from " Diet for a Small Planet " but

have adapted it....

 

2 cups cooked rice

1/2 cup grated cheddar cheese

2 eggs, beaten

2 Tbsp chopped parsley(fresh or dried, both work)

1/2 tsp salt

1/4 tsp pepper

1 lb fresh spinach (or one 14.5 oz can, drained

well)

Topping: 2 Tbsp wheat germ mixed with 1 Tbsp melted

butter

 

grease a casserole dish.

combine cheese and rice. combine eggs, parsely, salt

& pepper,

combine rice mixture with egg mixture, then add

spinach.

put all in casserole dish, add topping and bake @ 350

° for 35 minutes.

 

I usually use more cheese than this, kind of " by eye "

and I use whole wheat bread crumbs in place of the

wheat germ.

I've also mixed up the kind of cheese that I use, part

American, part mozzarella, monterey jack, any melting

cheese works really....

and I'm a big fan of Parmesean so I use a bit of that

too....

Also, if you use canned spinach, be sure to drain it

well and even pat it dry. I've never tried frozen, I

think it might make the dish watery.

p.s. in the book there's a note about what to serve

along with this, but really this is very filling and

This sounds good, but what do you call it. We need a name for the dish.

OOOOPS!!

sorry about that!

The first one is called " Spinach Rice Pot " .

The second one I guess would just be called " Green

Bean 'Burger' Casserole " .

I'll remember *names* from now on when I post. :)
