Zucchini Surprise

 

Ingredients:

 

2 medium zucchini

1 clove garlic - more always an option

2 tbs. olive oil

1/3 cup balsamic vinegar

fresh basil - dried spice can work

1 package tortellini or small ravioli or any pasta (not long)

optional: 1/4 cup white wine, 1 stalk celery, 1-2 scallions

 

Directions:

 

Start boiling water for pasta. Cut the zucchini into (large) bite size

slices - if it's a large zucchini slice then half or quarter. Mince garlic.

Chop basil. In a frying pan saute garlic (celery and scallions) then add

the zucchini. Stir frequently - best when zucchini gets a little brown.

When zucchini looks like it's getting soft add (white wine and) balsamic

vinegar. Lower heat and just let sit absorbing the flavors - stir

occasionally. Add pasta to boiling water - when done drain and add to

simmering zucchini pan Stir and serve hot or cold or let simmer for a while

longer.

Add more olive oil, balsamic, and/or dried basil. Garnish with fresh basil.

 

Serves: 4 - 6 depending on main or side dish

 

Preparation time: 15-30 min

Carob Walnut Cookies

1 cup maple syrup

1/2 cup canola or safflower oil

1 teaspoon pure vanilla extract

2 cups whole wheat pastry flour

1/2 cup carob powder

1 teaspoon nonaluminum baking powder

1 teaspoon baking soda

1/2 teaspoon fine sea salt

1/2 cup raw walnuts -- coarsely chopped

 

1. Preheat the oven to 350F. Lightly oil 2 baking sheets.

 

2. Put the maple syrup, oil, and vanilla into a blender and blend until smooth.

 

3. In a large bowl, whisk the flour, carob powder, baking powder, baking soda,

and salt until thoroughly combined. Add the maple syrup mixture and combine,

using as few strokes as possible so you do not overmix the dough. Fold in the

walnuts.

 

4. Drop rounded tablespoonfuls of the dough 1 inch apart on the prepared baking

sheets. Bake until the edges of the cookies are slightly browned, 14 to 18

minutes. Do not overbake.

 

5. Let the cookies cool 2 minutes on the baking sheets, then transfer to a wire

rack to cool completely.

I am looking for recipes that include barley, I searched some of the

files but didn't find any. I never ate barley as a kid and now that I

am an adult I really want to try making various meals with it. Any

tasty recipes are welcome. Thank you!

Looking for recipes

 

 

I am looking for recipes that include barley, I searched some of the

files but didn't find any. I never ate barley as a kid and now that I

am an adult I really want to try making various meals with it. Any

tasty recipes are welcome. Thank you!
