I might cook from my Hare Krishna cookbook tonight. I better hurry up and decide, it's getting to be that time now. Light night, I don't feel like cooking too much. I am tired tonight for some reason and I got a great night's sleep last night, must be old age, LOL. Guest guest Posted July 24, 2005 Report Share Posted July 24, 2005 my dinner last night was cereal as my fridge is defrosting so no cook meals anymore. Though I did have tofu lasagna for lunch. But it made me feel sick-the tofu they used tasted too much like meat. And tonights dinner will probably be cereal again. Guest guest Posted September 14, 2007 Report Share Posted September 14, 2007 I made a great pasta dish for dinner tonight and plan on cleanning up the left overs before I go to bed. It is not Vegan, but then, neither am I. It was really easy and quick to get on the table, too, cause I cut up the veggies early and made the sauce early, so when hubby wanted dinner it was fresh and hot in 15 minutes. Creamy Rottini and Vegetables 6 cups of fresh vegetables cut into bit size pieces. (I used red onion, green pepper, brocolli, cauliflower, carrots, mushrooms and yellow squash.) 12 oz package of multicolored Rotini pasta 2 tablespoons butter or margerine 3/4 cup evaporated milk (This is 1/2 of a can.) 1 tablespoon dry Italian dressing mix 1/2 cup mozzerella cheese Boil the pasta in 3 quarts of UNSALTED water for 9-10 minutes, until al dente. When done, drain and gently stir in the butter or margerine. cover to keep hot. While the pasta cooks, steam the vegetables. In a small saucepan, mix evaporated milk dry Italian seasoning and cheese until the cheese is melted into the sauce. It will require a simmer, but not a boil. Gently mix vegetables into the pasta and gently stir in the sauce to coat. Serves 3 Takes only 15 minutes if you have the veggetables cut up ahead of time.
