Guest guest Posted September 20, 2007 Report Share Posted September 20, 2007 We are pushing a one month anniversary too, of sorts. Just pushing a month here with no red meat. We hadn't been eating a lot of red meat anyway but I had some meatballs in the freezer I wanted to use up. Sorry. And I have had a hard time breaking my daughter's bacon addiction. We are eating fish AND poultry still. And we are both gluten intolerant. It hasn't been quite as difficult as I imagined. When I originally started the month I thought about going to two totally meatless days a week and was concerned about what I would serve. Now I pretty much am doing at least 3 meatless days a week and it hasnt been difficult to come up with recipes. But the support here is wonderful, especially the recipe files. I was worried about it just being me and all those beans! But there are a lot of food choices out there. And my daughter is expecting fruit and vegetables at every meal now. But it has been almost a month and we haven't consumed another mammal. Seems nice somehow. So we'll just keep going and when we are ready I'll either add another meatless day or just totally eliminate poultry, haven't decided which yet. Or we'll just get to the point where I am having to remind myself to cook poultry! Oh and by the way I always eat summer squash sliced raw with dip. It't the only way my daughter will eat it. There are the superb recipes in the files, vegetarian cookbooks are all over the place and the alternative burgers and hotdogs really make for easy meals. Our family kinda evolved also and even after three years I am still learning about products in our diet that has animal in them that I have to let go of like the Dannon fruit on the bottom that has bugs in it. Our food industry is so gross. Small steps are a lot easier on the family also. With all the fabulous meat replacements I don't miss meat and I converted all my beloved meaty recipes to vegetarian that made the transition a lot better. Best of luck in the journey. I have home visits once a month where I visit in the homes of my students. One of my Hispanic mothers had cooked for the visit & I ate. As we were eating I learned that the family was 7th Day Adventist. She made fresh mango juice to go with the meal of broccoli, carrots & chicken. I've never had mango juice before.
