Simple Sallet (Pilgrim Recipe 1600's)

Reading an article in my herb magazine , I came across this recipe and

decided to share it. I loved the spelling of the different herbs and

veggies. Thought all of you might enjoy it too. I copied these word for

word including capital letters.

Simple Sallet

 

Onyons boiled and stript from their rinde, and served up with Vinegar,

Oyle, and Pepper is a good simple Sallet;

So is Samphire, Beane-cods, Sparagus, and Coucumbers, also all young

Lettice, Cabage lettice, Pulslane, boyled Carrets, Skirrets and divers

other hearbes which may be served in likewise with Oyle, Vinegar, and

Pepper, with a world of others too tedious to nominate.

Note: I am going to check the dictionary for 'skirrets and saphire and

spynage.'

 

 

Compound Sallet

 

Your compound sallets, are first the young Buds and knots of all manner

of wholsome hearbes at their first springing: as Redde-sage, Mints,

Lettice, Violets, Marigolds, Sorrell, Spynage, and many others mixed

together and then served up to the Table with Vinegar, Sallet oyle and

Sugar.
