Guest guest Posted September 21, 2007 Report Share Posted September 21, 2007 Look at all the sandwich recipes in our Sandwich files. I sent in two Panini Sandwich recipes last week that are yummy. Try a sandwich with Veggies and Mayo or Veganaise. Green peppers, Olives, Onions, pickles, tomatoes, lettuces, spinach leaves, peperoicini(mildly hot pickled peppers), cucumbers, cheese, raw yellow squash, and zucchini, etc......... Sprinkle with Tony Chachere's Seasoning or some Garlic Salt. Bread some Eggplant slices in egg and then lay in a bowl with Italian bread crumbs, turning to coat both sides with the crumbs. Either bake(spray with a cooking spray if doing this so it will get golden and crispy) or fry it. Put it onto your toasted bread, pour some hot pizza sauce over it and sprinkle with mozzerella cheese. Make a cucumber sandwich. Make a spread for it with cream cheese, dill weed, and a little veganaise/Mayo. Spread this on the bread and put on your cucumber slices. Sprinkle with Tony Chachere's Seasoniong, Seasoned Salt or Garlic Salt. You could also put some shredded carrots on this sandwich. I think that some of the types of bread that the Ezekial Bread Company puts out is wheat free and could let you have more selections of sandwiches for your to enjoy. Most Health food stores carry a huge variety of their line of different breads. It will be in their freeze section. I love this bread!!!!! Egg salad sandwiches are another idea. If so, what is the best way to cook them? I can't eat anything breaded due to wheat allergy. I could, however, try crushing Wasa Rye crackers and mixing it with spices, and bread eggplant with that. That eggplant parm sandwich idea sounds tasty. I'd love to try Panini bread, but can't. All I can eat is the same old boring wheat-free rye from the health food store that I've been eating for 23 years. I've tried some other wheat-free breads but they crumble and fall apart as soon as I touch them. I will check the files. Just make the sandwich in the George Foreman Grill (I have the Hamilton Beach clone)!! You will find a new love for your bread. I just coat the bread on the inside with cream cheese (or vegan clone), add all sorts of vegetables, more cheese, perhaps a dab of salad dressing, grill until the cheeses are melting, and pig out. If you want a vegetable that won't work as well, you could stir-fry it. I do like my vegetables on the crisp side. With a panini, you can go wild and enjoy it!! Lots of shredded lettuce, sliced onions, tomato, pickles, pickled banana peppers, whatever. Another favorite is just a tomato sandwich, fat free mayo with sliced tomato and lettuce on toast. I then top it with a tomato, lettuce, pickle and cilantro garlic oil (which I put on almost everything). You can also put country mustard on it.
