Guest guest Posted September 22, 2007 Report Share Posted September 22, 2007 I usually just slice them up raw and put them in the sandwich. It is delicious and gives a nice crunch to the sandwich. Sometimes I toast the bread first in the oven with a little cheese and oregano sprinkled on it. Then I take it out of the oven and add the raw veggie slices. I have a Veggie melt Panini sandwich recipe in the files. In that one I saute the veggies first. It is wonderful!!! In the Pizza Panini and Pesto Panini you don't precook the veggies either. Soooooo good. Try the Cucumber and Squash Sandwich recipe too. It is great! Can you eat semolina bread? It is wonderful. Makes great crunch toast, subs, a base for a pizza(like a french bread pizza). Bib lettuce, Boston Lettuce, etc. Then put the filling inside. I often make finger sandwiches using Romaine Lettuce leaves. If you like cabbage try blanching the large leaves and use them as wraps. Good cold or warm. I love cabbage raw so sometimes make wraps with it. Cute little wraps that are less filling than bread. You can fill the leaves with anything and they are 'fancy food' to serve to guests that drop in. I have filled them with soy cheese, rice, nut butters, avacado and all sorts of raw and cooked veggies. Lots of shredded lettuce, sliced onions, tomato, pickles, pickled banana peppers, whatever. Another favorite is just a tomato sandwich, fat free mayo with sliced tomato and lettuce on toast. I can eat fresh ones just fine, but the last couple of times I tried to eat pickled ones, my throat and tongue and lips started swelling. Fortunately I always have Benadryl on hand so nothing happened. The first time was accidental, but the second time I did it intentionally, with Benadryl at hand. I'm guessing something in the pickling process is affecting me. Almost all pickled products have preservatives or flavorings in them. In other words, they have things that are not fit for human consumption. I'm allergic to wheat as well, but can have spelt, camut, buckwheat and rice flours and breads. I can't eat spelt or kamut, either, as both contain wheat and give me asthma attacks. I haven't had a roll, bagel, wrap, English muffin, etc., in so many years, I can't believe it.
