Sandwich Ideas - Maryann

I usually just slice them up raw and put them in the sandwich. It is delicious

and gives a nice crunch to the sandwich. Sometimes I toast the bread first in

the oven with a little cheese and oregano sprinkled on it. Then I take it out

of the oven and add the raw veggie slices.

 

I have a Veggie melt Panini sandwich recipe in the files. In that one I saute

the veggies first. It is wonderful!!!

 

In the Pizza Panini and Pesto Panini you don't precook the veggies either.

Soooooo good.

 

Try the Cucumber and Squash Sandwich recipe too. It is great!

 

Can you eat semolina bread? It is wonderful. Makes great crunch toast, subs,

a base for a pizza(like a french bread pizza).

you ever cook the veggies first? If so, what is the best way to cook

them?

 

I can't eat anything breaded due to wheat allergy. I could, however,

try crushing Wasa Rye crackers and mixing it with spices, and bread

eggplant with that. That eggplant parm sandwich idea sounds tasty.

 

I'd love to try Panini bread, but can't. All I can eat is the same

old boring wheat-free rye from the health food store that I've been

eating for 23 years. I've tried some other wheat-free breads but they

crumble and fall apart as soon as I touch them.

 

I will check the files.

You can also make a delicious sandwich using a good green as the wrapper.

Bib lettuce, Boston Lettuce, etc. Then put the filling inside.

Maryann,

For a change make a 'sandwich' using any of the great wheat free

crackers. I often make finger sandwiches using Romaine Lettuce leaves.

If you like cabbage try blanching the large leaves and use them as

wraps. Good cold or warm. I love cabbage raw so sometimes make wraps

with it. Cute little wraps that are less filling than bread. You can

fill the leaves with anything and they are 'fancy food' to serve to

guests that drop in. I have filled them with soy cheese, rice, nut

butters, avacado and all sorts of raw and cooked veggies.

And black olives. Can't forget the Subway black olives. I also have them

throw on a " few " japalino peppers.

It depends. Usually I make a veggie sandwich along the lines of the Subway

Veggie Delight. Lots of shredded lettuce, sliced onions, tomato, pickles,

pickled banana peppers, whatever. Another favorite is just a tomato

sandwich, fat free mayo with sliced tomato and lettuce on toast. There are

lots of choices you can make with the raw veggies.

I have them put on everything except the jalapenos. I can eat fresh ones

just fine, but the last couple of times I tried to eat pickled ones, my

throat and tongue and lips started swelling. Fortunately I always have

Benadryl on hand so nothing happened. The first time was accidental, but

the second time I did it intentionally, with Benadryl at hand. I'm guessing

something in the pickling process is affecting me. Yippee - another food

problem!

Penny,

 

It could be from the pickling process but my suspicion is that it is

from the chemicals. Almost all pickled products have preservatives

or flavorings in them. In other words, they have things that are not

fit for human consumption. This is the time of year to make your

own. they will be better for you and taste much better.

Hi Maryann,

 

How about rice bread, or oatmeal bread. Are there any health food stores

that Carry gluten, wheat free breads. I'm allergic to wheat as well, but can

have spelt, camut, buckwheat and rice flours and breads.

Thanks for the info!

 

No, I can't eat semolina, because it is wheat. I can't eat spelt or

kamut, either, as both contain wheat and give me asthma attacks. I

haven't had a roll, bagel, wrap, English muffin, etc., in so many

years, I can't believe it. I wish someone would come out with 100% rye

bagels/wraps/English muffins.
