Guest guest Posted September 25, 2007 Report Share Posted September 25, 2007 Trojan Pie 1 cup chopped cucumber 1 cup chopped tomato 1/4 cup chopped celery 1/4 cup green bell pepper 1 cup rice 1 can Mexican corn, drained 1/4 teaspoon salt 1/4 teaspoon dill weed 1/4 teaspoon black pepper 1/4 teaspoon mustard 1 teaspoon olive oil 1/2 cup vinegar 1 tablespoon parsley, chopped curly lettuce leaves Parmesan cheese, grated fine Mix the first 6 ingredients together in a large bowl. Combine salt, dill weed, black pepper, mustard, olive oil and vinegars. Pour over rice mixture. Chill for 4 hours or overnight. Place lettuce leaves on a plate. Top with salad.
