Guest guest Posted September 30, 2007 Report Share Posted September 30, 2007 Apple Oat Muffins (Vegan alternatives are in parentheses.) 3/4 cup whole wheat flour 3/4 cup unbleached white flour 1 1/2 tsp baking powder (3 tsp - more needed for leavening if egg replacer is used) 3/4 tsp baking soda 1 tsp salt 1 tsp cinnamon 1/4 tsp nutmeg 1/4 tsp ginger 1/8 tsp cloves 2 eggs (egg replacer = to 2 eggs) 1/4 cup oil 1/2 cup honey 1/2 cup plain yogurt (apple sauce) 3/4 cup milk (soy milk) 1 cup rolled oats 1 cup oat bran 2 medium apples Sift dry ingredients together in small bowl. Combine eggs (or replacer), oil, honey, yogurt (or apple sauce), milk (or soy milk), rolled oats and oat bran in larger bowl. Peel, core, and chop apples and fold into batter. Add dry ingredients to batter and stir until moistened. Spoon into greased muffin tins. Bake at 425 degrees for 20-25 minutes. Remove from pan and cool on rack. Makes 18 muffins. I realize this is a vegetarian group and I'm actually a vegan but it's nice to get ideas for recipes that I could try and make vegan by takinging out the dairy or egg ingredients or using replacers.
