DH even said " excellent " . http://www.theworldwidegourmet.com/vegetables/mushroom/chanterel-soup.htm Flavors of Finland Chanterelle Soup Total time: 40 minutes Preparation time: 10 minutes Cooking time: Under 30 minutes Cost: Very reasonable Difficulty: Very easy Ingredients for 4 servings * 3 tbsp. butter * 50 ml (1/4 cup) finely chopped onion * 400 g (14 oz.) chanterelle mushrooms, coarsely chopped * 3 tbsp. flour * 800 ml (3 1/4 cups) vegetable stock * 200 ml (3/4 cup) heavy cream * Salt and freshly ground pepper * 50 ml (3 tbsp.) chopped parsley Method 1. Sweat the onion and mushrooms in butter until the onion is translucent but not browned. 2. Stir in the flour and cook briefly. 3. Pour in the vegetable stock, stirring constantly. Simmer for 15 minutes. 4. Add the seasonings and cream. Bring to the boil. 5. Sprinkle the parsley on top just before serving. Serve with toast and butter. ©Copyright MSCOMM 1996 – 2007.
