Guest guest Posted October 5, 2007 Report Share Posted October 5, 2007 I will be going to two dinners; one with my family and the other with my husband's family. I'm making a Tofurky Feast dinner today and taking that with us for our dinner tomorrow. I'll reheat everything again when we get there. I'm also making a pumpkin cheesecake for dessert. There will be scalloped potatoes, sweet potatoes and a Lemon Meringue Pie (that my granmother is making). We are making perogies to take to the dinner on Monday at the in-laws, I hope they're o.k. keeping warm in my crockpot. (I use soy bacon bits for the bacon.) I am going to make a stuffing of whole wheat bread, onions, celery, poultry seasoning, walnuts and dried cranberries for the main course. If nothing else, it should be very pretty! Every year I make a cranberry-orange relish, I found the recipe a long time ago in Vegetarian Gourmet. I also make a veggie puff pastry dish that I modified from a recipe by Linda McCartney, published in Vegetarian Times many moons ago. I serve garlicky mashed potatoes (made with buttermilk & non-fat sour cream instead of butter and milk - cuts the calories), wild rice (or kasha) with mushrooms, asparagus (new this year) and zucchini, mushroom gravy and a salad. Desert is the traditional pumpkin pie and a rubarb crumble (at the request of my hubby and step-kids, who have the support of my mother and daughter - even though I really can't stand RHUBARB!! - ugh! But despite my dislike of rhubarb, I do a good job of a rhubarb crumble - go figure). Anyway, those are the plans, but we'll have to see how it goes. Happy Thanksgiving! If you have time, I'd love to see the recipe for your veggie puff pastry dish. I haven't worked much with puff pastry; I think it intimidates me but finished dishes always look so great. I can't stand rhubarb either except in rhubarb bread but hubby loves it and loves my strawberry rhubarb cobbler, funny huh? Then I just boiled them and added some sauted onions and soy bacon bits (added at the end) with lots of margarine. I put them in the crockpot and added a bit more margarine to melt throughout the perogies and keep them from sticking together.
