Pre-heat your oven to 350* You will need 2 square 8x8 cake pans or a 10x13 cake pan. I use an old pyrex pan about 10x10 and use the remaining mixture to make " meat " balls (recipie will follow in another post Just reserve half your meatloaf mixture for the meatballs) Ok here is the recipie. 2 bell peppers 1 large red onion 1 1/2 cup of stewed seasoned tomatoes.(I use the Trader Joe's started sauce for this) 1 package of Smart Grounds or your favorite ground meat replacement 1 box of saltines 2 eggs or egg replacement (flax seed tastes like poop in this recipie) 2 tsp of salt 2 tsp pepper 2 tablespoons of margarine Place all crackers in the food proccessor and grind until they are a mediun to fine crumb. Place in a bowl and set aside. Slice raw veggies and place in food proccessor. Pulse until very finely chopped but not pureed. Add eggs, margarine, " meat " tomatoes and pulse until well blended. Place in a bowl. Mix in about half the crackers. If the mix is still vry loose add more. Keep addin more until it is the constancy of biscuit dough. Press into the pan until the pan is 3/4 full. Guest guest Posted October 12, 2007 Report Share Posted October 12, 2007 I put them all in a food processor. I start with 1/2 in the mix. Then based on the consistancy I work up from there. It should be softer then bread dough but firner then biscuit mix. The reason that the cracker amounts differ is because sometimes you'll get really juicy veggies or sometimes they are less juicy.
