Now that I don't eat kielbasa, I don't know what to eat it with. I can't eat the fake sausage, as I am allergic to soy. Does anyone have any good vegan recipes that incorporate sauerkraut? Guest guest Posted October 11, 2007 Report Share Posted October 11, 2007 Saute some onions and green peppers in Smart Balance Light, then add in a can of drained shelly beans(which is basically green beans and pinto beans mixed together) and saute a bit more. Add in a can of sauerkraut that you rinsed in a strain bowl under running water to reduce tartness a bit. Heat and eat. I add Big Franks sliced up in rounds http://www.kelloggs.com/cgi-bin/brandpages/product.pl?product=214 & company=41 when I saute the diced onions and green pepper, but it contains soy, but for folks who eat soy it is great in this. Judy at the local health food store and cafe they a wonderful avocado reuben. you put thick slices of avocado on the bread (country style, rye, whatever), swiss cheese and a bunch of sauerkraut (organic saukerkraut in a jar). They grill this on a panini and it is wonderful to say the least. A friend of mine made it for me for lunch one day. She used pumpernickle and she didn't have a panini so she just grilled it in a pan. This is really good! There was another sauerkraut recipe posted with beans and tofu dogs. I cooked the large jar of kraut in the crock pot for several hours til tender. Drained it. Then in a sauce pan, sauted a bit of celery and onion then added the package of sliced tofu pups and a 28 oz. can of Bush's Vegetarian baked beans. When hot through I mixed in the sauerkraut.
