I'm not sure either....leftovers last night but no one showed for dinner but

me, so we still have leftovers. We've been invited to a fondue, but I don't

want to go even though I love fondue. Amy

Yes, and it is cold enough here to run the oven!! Otherwise, I would have

to take twice the time to do it in a toaster oven. I could use the nuker

for the squash, but I won't have to this way.

Yes, that sounds terrific. I love split pea soup. We are at 37 degrees F.

right now and only going into the mid 60s. A far cry from the 90s last

week.

Either enchiladas or split pea soup (the soup will probably win out). We

I don't know what I'm eating today but I'm not too worried about it. I've

gotta make something for dh's lunch & then he's going to a big family dinner

later this evening. I'm going to a co-worker's wedding so I won't be going

to the dinner.

It's Saturday! Eat out night! Fantastic veggie fajitas! But, last night I

had black bean stuffed peppers, that cooked all day in the crockpot.

Not from the files. Just winged it! I had leftover black beans and rice.

I added more rice, onions, garlic and Morningstar crumbles.

Poured plain spaghetti sauce over everything. I ate a HUGE helping with

mashed potatoes. I know....I know....not really healthy, but oh, so good!

Tonight I have an experiment in the oven, my daughter and I made vegetable

strudel, and herb mashed potatoes for dinner.

 

Last night my husband made grilled cheese with grilled onions for dinner.

cheese sauce, topped w/more cheese & baked 20 mins. Oooh baby... hot, gooey,

I confess, I'm being lazy today, but it's my only day of not babysitting so

I'm relaxing! Dinner tonight is a thin crust cheese pizza with a spinach

salad with onion, tomato, feta cheese and creamy Italian dressing for me and

ranch for my son. Then we may just have chocolate milkshakes for dessert

later on.

Breaded and fried Tender Bits, steamed cabbage, herb roasted potatoes and

garlic cloves, sweet and sour acorn squash

We also had some raw baby red, yellow and orange bell peppers.

IT WAS SOOOOOO GOOD!! The kids wanted it for breakfast but I told them I made

them muffins for then, lol.
