Guest guest Posted October 13, 2007 Report Share Posted October 13, 2007 Ok, I have questions group! We have gone over a month now with no beef or pork. No mammals period! I also started a new job this week and havent had much time to do meal prep, that may be the basic problem. And I can't get my daughter to eat beans. She is somewhat offended over soup period but has started eating it on occassion. She has never eaten a bowl of chili in her life. She will eat mashed up beans in mexican type cooking. She has been eating a spoonful of beans at meals at my request. I don't know why she is such a picky eater, she has been from the get-go. I have spent 9 years slowly introducing her to new foods. I have been pretty successful but we are now of course introducing more new foods. We are both unfamiliar with a lot of what seems to be vegetarian mainstays of cooking. I did buy some tofu this week but just am uncertain as to what to do with it. I have looked at the kids files last week, I guess I need to read them more. I thought the cuban cigars thing showed promise, I just havent had time to prepare them. Plus my local farmer's market closed last week so now I am looking at the grocery store veges until next end of May. I live in the midwest and it gets kinda scary during the winter months around here. There will now be less and less to choose from for several months. We do have a Whole foods, I have just been too busy to make the jaunt over to where it is. I tried making an artichoke-pasta recipe I found on a different site. I must not have done something right, it was not so good and was not well received. I guess I have just gotten bored with it this week, due to my insane schedule we ended up doing the ma- cheese, grilled cheese sandwiches, cheese pizza a bit too much here. It was so-so. I probably wont make it again. But....I do make lasagna with tofu, eggplant, and Nasoya Wanton wraps in place of the lasagna noodles. It's a great dish and freezes well. Tofu Sandwich on Whole Wheat 1 lb extra firm tofu 1 teaspoon garlic powder 1 teaspoon onion powder 1/4 teaspoon salt (or to taste) 1/8 teaspoon pepper 1 dash paprika, if you like tofu mayonnaise lettuce tomatoes mixed sprouts 2 whole grain buns (or sandwich bread, whichever you prefer) After draining the tofu, cut into four large pieces. Pat off any excess liquid. Mix all spices together and sprinkle over each piece of tofu. In skillet, brown tofu on either side for 3-4 minutes; or broil in oven on each side until browned. Toast whole wheat buns; spread with tofu maynonnaise. Add lettuce, sliced tomato and sprouts on top of tofu. Enjoy! I will also (always after raining very well), cube the toful marinate & bake. I use it as croutons or add to stir fries. I like the texture this was. OR, halve lengthwise then into triangles, sprinkle with seasoning or marinate then fry until crisp. Good with a dipping sauce. Guest guest Posted October 20, 2007 Report Share Posted October 20, 2007 ouch! easy on the cheese! great for you going meatless! As you go along, you will find many products that will make it easier. Tofu can be prepared at least a million different ways...my personal fave being drained, pressed, drained & pressed some more, sliced, seasoned w/flavor du jour & crispified in my cast iron skillet. This makes a nice 'steak' of sorts & is also good on a sandwich. I also cube it, season it & bake into crouton type things which I add to salads or stir fries. I think there's more to vegetarian cooking than just not including meat. One of my fave things is the 'Inspired Vegetarian' column in Cooking Light. Don't just leave out the meat - make something fabulous! There are soy sausages which you can serve up with french toast or eggs for breakfast (or even better have breakfast for supper!) Use loads of different spices & spice mixes... I think I've rambled enough for 1 post. Best of luck to you & keep dd trying everything!! Have you tried lentils or other legumes? There are soooooooo many different kinds - you can google & find places online to shop if you don't have an Asian or Indian market nearby. Oh! Edamame soy beans...i make a succotash type thing sauteeing onion, garlic, diced red peppers, jalapenos, corn & edamame. YUM & it's a meal unto itself. My kids (7 & 10) love it, too.
