I didn't even miss not having turkey Some people told me they made a big stuffed squash as their main dish, that I might try this year, as I'm going over a friend's house for the holiday. They need a string to tie them together and the stuffing srays in place and soaks up the flavor. It is great, expecially if the portabella is marinaded in vegetable broth with a little Braggs aminos and a little red wine. Katie Looking for a deal? We have mashed potatoes, brown gravy (I have to check the mix to make sure there's no meat flavoring in it), scalloped corn, green bean casserole, seven layer salad, a relish tray of veggies and pickles and olives, cornbread dressing, pumpkin pie, pecan pie, pudding pie, and lots of sweet tea to wash it down! I have a recipe box at allrecipes.com where I've stored my holiday recipes. Since I wasn't planning vegetarian dishes a year ago, I need to go look at my recipes & see which ones might need to be altered. My best space saving tip is to cook the dressing in the crock pot. Speaking of the day after Thanksgiving, look out! I love Black Friday!!!!!!!!!!!!!!!!!!!!!!!!! I can't wait until the Early Bird ads get 'leaked' & hit the internet! I make mashed potatoes, vegetarian stuffing, vegetarian gravy, corn, peas, pumpkin pie. For a main dish, I make manicotti. Strange as it sounds, it doesn't clash. I don't have Thanksgiving this year (I alternate years) so next year I need to find some healthier food, given my new way of eating. ;-) Last night I baked up two acorn squash and some unknown squash from my CSA box. Yum! I'm going to puree it and add some to my oatmeal. (Got the idea from Deceptively Delicious.) I love to cook most things from scratch but in this one case I must say I am a DIE HARD fan of the tofurkey brand complete turkey dinner I think it is called. It tastes great, is a round of tofurkey with stuffing in the middle, and comes with its own gravy. If I am feeling ambitious sometimes I make my own gravy for this but really, this entire package is great. And who needs extra hassle on Thanksgiving? Then I make gravy with the broth that comes inthe can with the FriChik. It is Yummy. It adds another nice entree to the Prosage with Jalapeno Dressing.
