Mexican Polenta casserole (from Cooking Light a looong time ago) Basic polenta Yes its true....here it is, just for you! TNT 1 1/4 C cornmeal 4 C milk or water Gradually add liquid to cornmeal, bring to a boil, stirring constantly (in this house? Stir constantly? HAHAHAHAHa. I stir frequently) Reduce heat & cook 15 minutes. Casserole 2 C shredded, lowfat Monteray Jack cheese 1 C salsa 1/4 C chopped cilantro 1/2 tsp chili powder 1 can drained black beans 1 C green onions, chopped Make basic polenta, stir in 1 C cheese and green onions. Mix remaining ingredients. Spray 13 x 9 baking pam w/ nonstick cooking spray. Layer polenta, beans, polenta. Bake 35 min @ 350º. I never layer the polenta/beans. I put in bean mix and top w/polenta. And you can make it as spicy as you like.
