Guest guest
This is wildly pretty and tastes like pie 5 cups water 1-1/4 cups steel cut oats 1 teaspoon grated lemon rind 1 teaspoon ground cinnamon 1/4 teaspoon ground nutmeg 1/4 teaspoon ground flaxseed 2 cups blueberries a handful of walnuts Bring water to a rapid boil. Add oats, lemon rind, cinnamon, nutmeg, and flaxseed and lower heat to a simmer. Stirring occasionally, cook for about 20 minutes or until you like the texture. Add blueberries and cook for five minutes more. Turn off heat, add walnuts, cover pot and leave on the stovetop for another five minutes. Makes about 8 cups
Guest guest
This sounds like one of those wonderful comfort foods that would be great after the whole family comes home from being outside playing in the snow or raking leaves ! I can't wait to try it. Susan http://www.jaxtr.com/sheliya

Guest guest
Yay!! I'm so glad you liked it, Beth! Now that fall is here, I really need the smell and taste of pie in the a.m. Beth wrote: > This was sooo incredibly awesome!! > > Beth > > > , Maureen <ailanthus wrote: > >> This is wildly pretty and tastes like pie >> >> 5 cups water >> 1-1/4 cups steel cut oats >> 1 teaspoon grated lemon rind >> 1 teaspoon ground cinnamon >> 1/4 teaspoon ground nutmeg >> 1/4 teaspoon ground flaxseed >> 2 cups blueberries >> a handful of walnuts >> >> Bring water to a rapid boil.
