Cheese all by itself whether in a ball form or otherwise is not healthy, especially for teens. There should not be a trend toward feeding kids something that will lead to a habit which could cause future heart problems ie overdosing on cholestorols. Usually in fancy restaurants, they are served sliced marinaded with some really good quality tomato. You can cut them up in very small [1/2 inch squares] so they don't know what they are. When I have put them in salads, [adult] people think they are tofu so my guess is that the kids think they are tofu. And we know that most kids are afraid of tofu, inappropriately, but that is part of the meat-eating brainwashing that has gone on in our culture. I think that a little education is in order--a sign by the dish that this is the same cheese as is used on pizza, it is just not aged as long, or something like that. You can also serve them in hot dishes, but they tend to leech a lot of water so you have to be careful. The classic way to eat it is in a caprese salad, which is basically a composed salad of sliced tomatoes and sliced fresh mozzarella, with a little basil, salt, pepper and olive oil drizzled on top. This is how I serve them to my nieces and nephews. They love them, and so do I. I think they are a lot healthier than a greasy burger topped with cheese and mayo and fries or chips on the side. Since it is in a form unfamiliar to most of them, they may think it is something nasty. One of our grandsons is living with us and he wouldn't touch string cheese but will eat mozzarella sticks, lasagna, etc. Kids can be less than adventuresome when it comes to eating.
