The following recipe is lacto-ovo since it has milk and eggs, but vegans can substitute whatever to make it. Elephant Ears 1 cup milk 3 tablespoons sugar 1 tablespoon salt 3 tablespoons shortening 1 package dry yeast 1 cup warm water (105 to 115*F) 4 1/2 cups bread or all-purpose flour vegetable oil for frying 1 cup sugar 1 teaspoon ground cinnamon Combine milk, 3 tablespoons sugar, salt and shortening in small saucepan and heat, stirring until the shortening melts. Dissolve yeast in warm water in a large mixing bowl. Let stand 5 minutes. Add milk mixture and 2 cups flour, stirring until smooth. Gradually stir in enough flour to make a soft dough. Turn dough out onto a floured surface and knead until smooth and elastic (about 8 to 15 minutes) After kneading, place dough in a well-greased bowl twice the size of the dough. Cover with a clean tea towel or plastic wrap and put in a warm place to raise. (1 hour plus, depending on the temperature) Punch down dough and turn onto a lightly floured surface. Divide dough into 12 pieces and form into balls. Roll each ball of dough into an oval, 1/8th inch thick. Heat oil to 375*F in skillet large enough to deep fry elephant ears. Fry one at a time, cooking 3 to 5 minutes per side. Remove from oil and drain on paper towels. Combine sugar and cinnamon and sprinkle each elephant ear with mixture. Enjoy!
