Guest guest Posted October 23, 2007 Report Share Posted October 23, 2007 If you are talking about kausa, I believe that its the Libyan variation on " koosa " which is an Arabic vegetable, but I could wrong. If it does refer to koosa, it is zucchini-like, but a light green, and smaller and fewer seeds. It is usually cored out and stuffed whole with a rice mixture, then braised in a lemony and minty tomato based liquid. It is YUMMY!
