Hi everyone--I'm new to the group. I have experimented with

vegetarianism at various times in my life and I always feel much

better when I don't eat meat. Recently, I have suffered some digestive

problems and doctors tests turned up nothing but gastritis. I quit

eating meat, and I feel much better. No more pain, and I have so much

more energy! I also found Colin Campbell's book, the China Study, a

couple of weeks ago, and I think I am finally ready to commit to being

a vegetarian for life.

I think the reason I have kept going back to eating meat is I get

bored with my diet. I joined this group to learn some new recipes so

that I can stay interested and satisfied with food, and still be

healthy. Nice to meet all of you!

Hi. I'm also new to the group, my name is Françoise (French living in France)

and I've been a vegetarian for almost 8 years now. I experienced the opposite:

my meat diet was so boring that it was a relief to become vegetarian and

understand that I didn't have to follow recipes and could create new ones as

often I as liked! I was lucky as my husband and daughter turned vegetarians too,

some weeks after me (and even my 80 years old parents have been convinced by

tofu and seitan ...).

I'll try to post some recipes, but I'll first have to convert quantities into

cups and pounds and teaspoons ...

Excuse the clumsy English, I'll learn a lot with you all.

Welcome Francioise, I look forward to seeing some of your recipies.

I agree with you, the vegetarian diet is so varied that I never get bored with

the same thing over and over. I love making up my own dishes and tweaking old

recipies to leave out the meat and increase the flavor. I like seitan I don't

use it often either. It is to much trouble to make my own and to expensive to

justify buying it, so we don't eat it unless a meat like something is really

necessary to make a recipe work.

I am excited to hear about your seitan dishes, though.

Don't worry about clumsy English, Your english is far better than most of our

French.

Just give me a few days to translate some recipes and I'll send some.

About seitan, the best one I ate was in Ecuador ... it was homemade and

marvellously cooked, in a small vegetarian restaurant (not mentioned in guides).

I've tried to make my own but the result was rather poor! I'll try again, one

day.

Thanks for the welcome.
