The Spot Vegetarian Restaurant in Manhattan

Beach, Calif.

 

Neptune Loaf

 

1/2 bell pepper, I use red, chopped small

1 1/2 stalks celery,chopped small

2 cups assorted vegetables chopped to bite size pieces

(carrots, zucchini, broccoli, cauliflower, peas etc.)

2 eggs, beaten (or use replacers)

12 oz. whole wheat or regular noodles (ziti or penne

size)

3 cups grated cheddar cheese or soy cheddar cheese

3 Tofu Burgers or 1 pkg.firm tofu drained and chopped

small (if using plain tofu add a little extra Braggs,

Tamari

and kelp powder).

1 tsp. Braggs Liquid Amino

1/2 tsp. granulated garlic

1/2 tsp. kelp powder (don't skip this ingredient, it

gives the loaf the sea taste, in Asian or health food

stores)

1/2 tsp. Tamari (or soy sauce)

1/2 cup onion, chopped small

 

Preheat oven to 350 degrees

Lightly oil a 9 X 12 baking pan. Cook whole wheat

noodles according to package directions, drain and

rinse. Steam the 2 cups of assorted

vegetables along with the bell pepper, celery and

onion for 3-5 minutes.Mix all

the ingredients together in a large bowl. Press into

the prepared baking pan. Sprinkle a Little extra

cheese on top and bake for 40-45 minutes.

I made this and it sure is good. I ate the whole loaf in 2 days by

myself.
