Thanks Dennis! It was fine, and the rice was good. The kids turned up their

noses (today must be a picky day) but I liked it. Haven't checked with hubby

yet.

The coconut milk was expiring this month...that's how old it was! So it had

been sitting definitely long enough to separate! Amy

Doug loved it too...he forgot the cilantro but put on peanuts and red pepper

flakes. Definitely a keeper! I've already put coconut milk on the grocery

list. We're going to a Halloween party in the neighborhood Wednesday and I'll

take that. Amy

I always shake the can and hurry and pour so I never

see a separation. I can't stand to even look at milk

and coconut milk looks like milk and so does a pina

colada.

I shake the can open and pour, I'm sure it's fine though. I never

really paid much attention to the texture.

It should be fine. Coconut milk tends to separate when it sits for any

amount of time. Because of the water content to it, just like salad

dressings separate with the oil and vinegar parts.

Noe that's good news, you got to use up the coconut

milk and enjoy your rice. I love that recipe.

Kids will be kids. Sometimes they shock you and

really enjoy something you think they wouldn't.

This sounds good. I need to go look up that recipe. I bought some coconut

milk at Big Lots for .50 can. A lot cheaper than anywhere else.
