It did have a brief outing to what was supposed to be a " pumpkins for peace " vigil, but it ended up with just two of us turning up... and neither of us are a member of the group that organised it!!!! The eldest has one in her school lunch box, but the youngest didnt like them. To be brutally honest, they were not the best muffins I have tasted. Not done anything with pumpkins. I do use butternut squash now and again, roasted, in soup etc..... However, I can tell you the ingredients I mixed together :-) Ok, shallow fry garlic and onion with some olive oil in an appropriately sized saucepan for the soup. When they are golden, add some sliced carrots and cubed potatoes and stir in salt and pepper and some herbs (I used thyme, ground coriander, cumin, ginger, nutmeg and plenty of dried chilly (or you could use fresh chilli too, I'm sure) and the juice of a lemon or lime. I then added my mushed up pumpkin innards and mixed it all together. Then add enough vegetable stock (I'm lazy and just use organic vegan stock cubes in boiling water but you can make your own stock if you like) for the ingredients used. I added a couple of pints or so. Mix, cover, bring it to boil then let it simmer. When it looks ready (potatoes are soft and it taste nice as far as I am concerned!), let it cool for a few minutes then blend the whole lot and add some freshly ground pepper or a swirl of soy yoghurt. Perhaps it was the English accent they didnt understand the question! How come the more famous dieties all sound welsh?
