It takes about 20-30 minutes. 1 medium onion 1 1/4 cup kombu broth 3 Tbs mirin 1 1/2 Tbs light soy sauce 1 1/2 Tbs dark soy sauce 2-4 green onions cut to 1/2 inch lengths 3 eggs, lightly beaten 2 Morningstar Chik'n patties Slice onion into 1/4 inch half moons. Saute in a tiny amount of oil until soft. Add broth, mirin and soy sauces. Bring to a simmer. Add green onions. Pour the eggs over the simmering onions. Stir when eggs begin to set. Egg is done while still a little runny. (do not cook egg until hard & dry) You want the juices to seep down into the rice. To assemble and serve: Put a single portion of rice in a bowl. Place sliced Chik'n patty on top of the rice. Place fried egg & onion mixture over the top of the patty.
