Gene Curried Carrot Soup 8 carrots, peeled, roughly chopped 5 celery sticks, chopped 2 cloves of garlic, chopped 1 large onion, chopped 4 to 5 cups of water or broth 1 tablespoon of olive oil 1 teaspoon of curry powder Salt. Heat up the olive oil in a large pot; then fry the chopped garlic and chopped onion for 4-5 minutes. Add a teaspoon of curry powder, then stir. Add all of the remaining ingredients except the salt and cook until the vegetables are tender. Mix in a blender until the soup is smooth. Add salt to taste and serve. My husband loved the soup and he doesnt really like cooked carrots. Yours seems easy and yummy I will keep it on file for next time. This is the carrot soup that I made it was also very good. Carrot soup Ingredients: 6 carrots or 3 cups coarsely chopped 1 large potato with the skin if it is thin (you can also use a sweet potato)cubed small 2 Tbsp. olive oil 1/2 large spanish onion chopped fine l cup (I think 1/2 cup would have been enough) soy regular not flavored 4 cups vegetable broth 1 1/2 tsp. dried dill. Method; On medium heat saute vegetables in olive oil until onions are tender (about 10 minutes) Transfer vegetables into a large pot. Add broth and soy milk stir being careful not to boil. Cook on medium heat for about another 10 minutes. Transfer batches of soup to a blender (I have a mini food processor) Put back in pot.
