Guest guest Posted November 4, 2007 Report Share Posted November 4, 2007 @@@@@ Turkish Cabbage Salad - Beyaz Lahana Salatasi 1 head of white cabbage 4 small carrots, peeled and shredded (or use the package carrots already shredded) Sauce: 1/2 cup extra virgin olive oil 2 lemons, juice only (strain to elimiate seeds) 2 tbsp, and 2 tsp salt Pepper Kalamata olives for garnish Remove and throw away the white centre of the cabbage. Cut the cabbage in thin slices (julienne cut) on a wooden board. Place into a large sieve. Sprinkle 2 tbsp salt all over and squeeze the cabbage pieces with your hands. Wash, drain and place on a service plate with the carrots. Combine remaining 2 t. salt with extra virgin olive oil, fresh lemon juice, and pepper. Pour the sauce over cabbage/carrots and toss. Garnish with olives.
