The kids and I were just talking today about making PB Cookies and I'd love it if they had less sugar! They can be complicated and expensive. This recipe for peanut butter cookies is the easiest one you'll ever make and they are delicious. Peanut Butter Cookies (makes 2 - 3 dozen) 1 cup peanut butter 1 cup sugar (plus extra later) 1 egg 1. Preheat oven to 325. 2. Mix all ingredients until smooth. 3. Roll into 1 " balls and place on an ungreased cookie sheet. 4. Dip the bottom of a glass into some sugar, then slightly flatten the cookies. You may also score them with a fork. 5. So easy infact, I can actually let my older two make it by themselves w/o worrying about hovering over them making sure they don't get flour all over the flour! To answer a couple of questions: No, there really is no flour involved. It sounds like the recipe shouldn't work, but it honestly does. And as for the mishap, my guess is that perhaps the peanut butter you used was too warm (but I'm no expert LOL). I'm going to hunt down another really simple recipe I have for coconut macaroons...
