re:question Ivy- beans

My daughter isnt a bean fan either. Mash them into things. Works

for us. I make tacos with just mashed beans, cheese, lettuce, no

meat. You can put mashed beans in all kinds of things. Under the

recipes files there are files for kids cooking. I found I like

these items as much or better than my daughter.

 

Also I am really new to this all too. I just decided first of all I

would eliminate red meat and pork. We are still eating chicken and

seafood. The longer I do this now though I find our meat days are

getting fewer and farther between. Now that fall is here and the

farmers market has closed I found myself not eating as much fresh

fruit and veges for a few weeks. We need to get back on the stick.

But other than apples and citrus there arent many fresh fruits

available in this part of the country until spring again.

 

Tofu. I dont like it plain. I made a 'stew' the other night and

used the traditional stew vegetables and added chunks of tofu to

it. The tofu did pick up the 'stew' flavor. The texture was

different but not objectionable. I want to make lasagna with tofu

soon. I'll bet it is good. There are a million things on this list

that they talk about that I have never had. Try them a bit at a

time. After I tried some it gave me a bit more confidence.

 

But seriously I would check out the kids recipe files. There are

some seriously good, easy meals there that I like very well.

I have not tried tofu yet, but from what I have been told and read, I am not

sure I will like the texture..That is a big issue for me ..Taste is usually not

the problem..I love banana flavor and tomato flavor, but cannot eat them as a

Karen,

I was afraid of tofu too. My solution was going to my favorite Chinese

restaurant where they know I'm a vegetarian (plus dangerously allergic to

shellfish) and I asked them to recommend one of the vegetarian dishes with

tofu in it. That's how I discovered I liked it. Learning to cook it was a

different story though, but one I've finally got to where no one complains.

I'm far from an expert, but it's getting better now that I'm not afraid of

it anymore. If you have a favorite Asian restaurant that you go to often,

you might ask them to recommend a dish. At the worst, you don't like it and

pick the tofu chunks out. At best, you find out you do like it and then you

can learn how to fix it!

I only use tofu in stir-fries. My favorite is to make a variation of crispy

tofu. Drain and press, then cut into 3 layers, then into thirds lengthwise

and crosswise, and then cut into triangles. I put them on a baking sheet

that's been sprayed with nonstick spray, then spray the tops of them and put

seasoned salt on the triangles. Then bake at about 400 degrees for oh,

about 20 minutes or so and add it to the stir-fry at the last minute. My

granddaughter will pick them out and eat them first, my son likes them okay.

Basically, that's the only way I use tofu though.
