" Corn Pudding

 

 

 

 

 

 

 

Corn Pudding

 

Category: Side Dishes

 

 

 

Suitable for a: vegan diet

 

 

 

Ingredients:

 

---------------------

 

 

 

2 tablespoons of Earth Balance

 

1 teaspoon of Energy ( egg replacer)

 

2 cups of Soy Milk

 

2 cans of corn

 

2 tablespoons of Flour

 

1 tablespoon of salt

 

1 teaspoon of pepper

 

4 tablespoons of organic sugar

 

 

 

Instructions:

Pre-heat oven to 400.Melt Earth Balance and set aside.

Stir your egg

replacer with soymilk, add Earth balance, stir in the remaining

ingredients.

Stir only once.

 

Bake for 45 minutes at 400.

Let stand for 2 minutes before serving.

This corn pudding was a recipe that my mother in law gave me. I have

modified it for a vegan diet. I made it this Christmas and it was a

hit. The texture is different form your normal corn pudding but is a

excellent animal friendly dish. I hope you enjoy and your feedback is

Looking for a vegan corn pudding recipe...

 

 

I have been scouring the web (ok, looked for about half an hour...)

for a vegan corn pudding recipe but I've had no luck. I'd imagine it

would be possible to replicate the eggy-ness with whipped silken tofu

or something similar but I don't have time to do much experimenting

before thanksgiving. Does anyone have a TNT recipe or even one that

may not be TNT but looks good? Thanks!
