I tweaked it a little bit by slicing the tofu into bite size pieces and frying them in a little oil to a light golden color and then making the mashed potatoes the way i normally do the egg yolks. They were a hit. We are taking them to church potluck (all our church potlucks are vegetarian) to see how well the go over.
