We roasted some potatoes chunks, carrots chunks, garlic cloves and green pepper chunks on another baking sheet, for dinner tonight also. Just tossed with some oil and salt and some Tones Southwest Chipotle Seasoning(you can find this at Sam's Club) and baked it until crispy and done. Oh were those garlic cloves sweet and good.......... We loaded it up with those. I buy the peeled garlic cloves at Sam's club in a big jar. So easy to use. Pour out onto a baking sheet and bake about 30 minutes on 425. Stir as needed so that all sides are crisy and brown. Sprinkle with some Tony Chachere's Seasoning and toss well. Yummmmmm. I don't much do chipotle...evidently I am slightly wimpish on the heat scale. What my friend thinks is NO heat is burning my tongue! I put on some citrus grilll seasoning from Sams. A little goes a long ways with it. The spice blend isn't all hot, so it isn't quite like putting just chipotle's on it. It does have salt in it, so you don't really need to add salt when using this spice blend. I'll have to look for the Citrus Grill seasoning. I've not noticed it before. I am not sure if I should admit that but I do. I have never roasted them like this, which is kind of crazy, but I think steaming is so fast... I will have to learn some patience. I think I might have discovered smoething that will save me during the holidays. although a double oven would be nice. I bought cherry pie and blueberry pie, because for some reason I am not that tempted by pie. but tomorrow I am going to have to make that pumpkin chocolate cake ....to try it out. I will mke it in little pans to give most of it away! maybe roast some veggies while the cake bakes!
