Yellow Submarine Soup - Recipe Repost

Yellow Submarine Soup

 

2 onions, coarsely chopped

4 garlic cloves, crushed

2 cups yellow split peas

1/2 tsp. thyme (dried)

1 tsp. oregano (dried)

1 tsp. salt (use salt to taste when soup is done)

1/4 tsp. cumin

1 tsp. pepper

1/4 to 1/2 tsp. crushed red pepper flakes

6 1/2 cups vegetable broth

 

If making on the stove then saute the onion and garlic

 

for a few minutes in a tablepoon ofolive oil until

tender firm. Add other ingredients and bring to a

boil, reduce heat to a low simmer and cover pan. Cook

for 50 minutes, soup will be a nice rich thick soup.

Salt to taste.

If using the crockpot I place everything in the

crockpot and let cook for hours on high and turn temp.

to low for the last 1 or 2 hrs.

I can't find the recipe. I looked in files under soups and I tried to

search, but that just pulls up commments, but not the recipe. Would

someone please send it to me. I have my yellow squash and am ready.

What do I do with this silly squash? Doesn't it go in to the pot somehow?

Hi Katie

I think you may have picked up on a joke we were having with this

recipe some time ago. I was hunting for baby yellow courgettes

(zucchini) which I could steam and then float in each soup bowl like a

yellow submarine. Sadly I never managed to find any whenever I made the

soup.

Katie-make this good soup and steam the yellow squash and float it in

a large soup bowl for all to see. I did this and the tribe were

waiting for Paul or Ringo to pop out.

This is a very good recipe whether you float a yellow submarine

squash in it or not.
