Guest guest Posted November 23, 2007 Report Share Posted November 23, 2007 Feta and Olive Salad with Baby Spinach and Iceberg Lettuce Dressing: 3 tablespoons puréed raspberries or raspberry preserves 4 tablespoons champagne vinegar 3 tablespoons olive oil salt and pepper to taste Salad: 1/2 large head of iceberg lettuce, chopped 1 cup cherry or grape tomatoes, halved 1/2 cup olives, pitted and chopped 1 cup cleaned baby spinach 1 cup feta cheese, crumbled 4 tablespoons walnut halves Whisk all dressing ingredients together and season to taste. In a salad bowl combine the lettuce, tomatoes, olives, and spinach. Toss to mix. Top with feta cheese and walnuts. Serve with the dressing on the side. Be a better pen pal.
