Pizzelles

 

1 c. butter (melted and cooled)

6 eggs

1-1/2 cups sugar

3-1/2 cups flour

4 t. baking powder

2 t. vanilla

 

Beat the eggs and sugar til creamy and well blended. Add butter. Mix then add

in balance of ingredients. Batter will be stiff. Preheat pizzelle iron and

bake as per iron's directions. Probably 45-60 seconds per batch. My iron makes

4 smaller, thinner cookies and some will make 2 larger, thicker cookies.

 

When the batter is about half gone, we add cocoa powder to suit and make

chocolate cookies.

 

Also, we have a great cinnamon variation . . . all ingredients remain the same

with the exception of

 

substitute brown sugar for the white

add 1 t. cinnamon (we like more)

Party Traditions

 

When the kids were little, we would always decorate while playing Christmas

music or put videos in the player (these were the days before DVDs). Of course,

I would be baking cookies, especially chocolate chip and they would eat them

almost as fast as they came out of the oven . . . that's if I could keep them

out of the cookie dough bowl. They are all grown up and have homes of their own

now. So, DH and I put on holiday music and decorate all day, real slow. We have

really cut down on our decorating and everything is baby friendly for the

grandchildren. That way, everything out can be played with also. They just adore

all of the talking and music playing ones! Christmas, for us, is all about the

kids and grandkids, nieces and nephews. Any time spent with family is special

for us! We don't need a special reason to celebrate! I've decided to cut way

back on baking this year. I usually bake an obscene amount of cookies at the

kids request. This year, I am letting

my dear daughter-in-law and chef son-in-law do the baking. I'll probably make

pizzelle's (one of our favorites) and ok, one batch of chocolate chips. What

would Christmas be without the tollhouse cookies! And if the big kids are

around, I will be scolding them as they sneak the cookie dough!
