Guest guest Posted November 28, 2007 Report Share Posted November 28, 2007 @@@@@ Tomato-Feta Dip - 2g carbs, 0g fiber 1 teaspoon fresh lemon juice 1 tablespoon olive oil 1/4 teaspoon red pepper flakes 2 garlic cloves, minced 1 can (14.5 ounces) diced tomatoes with basil, garlic and oregano, drained 4 ounces crumbled feta cheese Nonstick cooking spray In a small bowl combine the lemon juice, olive oil, red pepper flakes, garlic and tomatoes. Sprinkle the feta cheese evenly in a small shallow baking dish coated with cooking spray. Top it with the tomato mixture. Bake for 20 minutes. Serve with toasted bread slices.
