Cottage Cheese Roast

This recipe was given to my by my aunt and I was so skeptical that I only made

1/2 a recipe!

It's an odd mix to me and too simple??? Well, my husband and I just loved it.

We scooped it out of the dish and served it as a casserole last night and today,

for lunch, we sliced it and it made wonderful sandwiches. My sandwich had

mayo/vegennaise, spinach, and avocado with a slice up roast. Yummy.

Cottage Cheese Roast

 

16 oz low fat cottage cheese, small curd

14 cup canola oil

1 package Lipton Onion Soup Mix (I will use less next time, it was a little

salty for me)

3 - 4 eggs (I used Eggbeaters)

 

Mix

 

Take Cornflakes cereal, by the handful, crush in hands and form a top layer

about an inch thick!

Mix the cornflakes in.

 

Place in loaf pan and Bake 1 hr at 350. I only made 1/2 and used a Pyrex dish.

I cooked it about 35 minutes, until brown and bubbly, but I think I should have

cooked less. Of course, a loaf pan will bake up differently.

I will try this, but I don't understand what you mean about the corn flakes

being a top layer and then being mixed in.

Katie, I can understand why you are wondering. When my aunt was explaining it,

she was listening to me say.... " What " ?

 

Crumble the cornflakes over the top of the casserole, to the thickness of one

inch, then mix into the casserole. It's only a way to estimate how much you

will need. Hope that helps.

This sounds very similar to Special K Loaf which is a potluck staple

in Adventist circles. Here is my recipe for it.

 

Special K Loaf

 

1 16oz container cottage cheese, (I substitute tofu)

4 eggs

1 large onion chopped and sauteed in 1 stick of margarine

3pkg George Washington broth or 1/2 pkg Lipton Onion soup mix

1/4c milk,(I use soy)

3/4c chopped walnuts

6c Special K

 

Combine all ingredients and press into a greased 9x13 pan and bake

at 350 for 40 minutes

Would this turn out ok if I substituted something for the eggs? What would I

use as an egg substitute?

 

We're trying to eat vegan in our house.

Yes I have had it made with ener~g egg replacer and it was still

just as good. We are trying to eat a more vegan diet also but I have

not tried to make it that way yet.
