Guest guest Posted December 9, 2007 Report Share Posted December 9, 2007 We had a Black Bean Stack for lunch today. Here is what we did. Cooked Rice 2 - 16 oz. cans of Black Beans + 1- 14 oz can of Tomatoes with Green Chilies - Heat up the Black Beans and Tomatoes with Green Chilies together. Diced Bell Pepper Diced Onion Grated Cheese Then on your plate. Put a layer of Rice. Ladle the Black Bean mixture over this. Sprinkle with Green Peppers and Onion. Then Cheese. After lunch we had some left over rice. So for dinner, I had some leftover Corn in the Refrigerator. I heated up a 16 oz can of Garbanzo beans with 1 16 oz. can of diced tomatoes. Stired in about 1/2 tsp of Garlic Chili Sauce(find this on the Asian section of your grocery store). Then in my bowl I added some cooked rice, corn and the Garbanzo Bean/Tomato Mixture. Heated it in the microwave, covered. It was so good......... Cooked Rice is also delicious with some sugar sprinkled on top, as treat. We often do this with leftover rice. You could reheat it and make a stir-fry to serve with it. Look in the salad folder. There are some salads that call for cooked rice. My mom used to use leftover rice to make a really yummy breakfast food. She would heat it up with milk, cinnamon, sugar, raisins. I never was able to accurately replicate her recipe. Guest guest Posted December 9, 2007 Report Share Posted December 9, 2007 Chop up some onion, garlic,celery, bell peppers, and pepper saute it all add some beans (red or black) then add the rice. You can also make them in to patties chop up onions, carrots garlic, peppers, and some corn, then saute or roast them and mix them together to make them into a patty.
