Leftover cooked boiled rice?

what a great idea! I have some I might do this with today. Wonder if the

squirrels leave it alone.

 

I made this, this morning:

 

custard rice pudding

INGREDIENTS:

 

 

* 1/2 cup plain cooked rice

* 3 eggs, beaten

* 1/2 cup sugar

* 1/4 teaspoon salt

* 1 teaspoon vanilla extract

* 1 teaspoon grated lemon rind

* 1/2 cup raisins

* 3 1/2 cups milk

* ground nutmeg, freshly ground if possible

 

 

PREPARATION:

In a large mixing bowl, mix all ingredients except nutmeg. Pour mixture into

a lightly buttered shallow baking dish and sprinkle with nutmeg. Place

baking dish in a pan of hot water in oven and bake at 300° for about 1 1/2

hours,

or until set. A clean knife inserted into the center should come out with

nothing clinging to it. Serve warm or chilled with whipped cream or whipped

topping, if desired.

 

It is ok, but not what I really wanted. I wanted something along the lines

of what a restaurant I used to work in made. Will keep looking.

oh believe me they get lots!!! Maybe the rice would keep them off my bird

feeders. I did buy DH a corn feeder for squirrels for Christmas, so they aren't

completely shunned. ;-p

when I had leftover rice or pasta I feed it to the birds. Very important that

the rice is cooked or it could kill the birds.

I love when they eat leftover spaghetti, it hands from their beaks and looks

like worms. LOL! It gives them good carbs for the cold.

I've always been told that the best fried rice comes from cold rice. Never

happens at my house, but that's what an online cooking course said.

Ideas...

Mix with taco seasoning and make tacos.

 

Make breakfast cereal, use like you would oatmeal.

Oh thanks Val, I was really unsure of this, have never frozen cooked boiled

rice and was scared to have a go, but this solves my immediate problem, and

will be fantastic when I just want a portion of rice for my meal when I come

home from work (as I live with a pescatarian and an omnivore, I always cook

just for myself) thanks a million!
